Ingredients

For the Beef Qeema Filling

  • Minced beef (qeema)

  • Grated onion

  • Salt (namak)

  • Black pepper (kali mirch)

  • Tomato paste

  • Lemon juice or pomegranate juice – ½ tsp

For the Bread

  • Kubus / Arabic bread (from Turkish or Middle Eastern store)

For the Yogurt Tahini Sauce

  • Plain yogurt

  • Tahini – 1 to 1½ tsp

  • Lemon juice

  • Freshly minced garlic

  • Salt & pepper

  • Crushed coriander

For Garnish

  • Pomegranate seeds

  • Fresh coriander


How to Make Arayes Fatteh

Step 1: Prepare the Qeema Filling

In a bowl, add minced beef, grated onion, salt, black pepper, garlic powder, paprika, cumin, tomato paste, and lemon or pomegranate juice.
Mix everything well until fully combined.


Step 2: Assemble the Arayes Rolls

Take kubus bread and spread the qeema mixture evenly over it.
Roll the bread tightly and cut into rolls.

Place the rolls onto skewers to keep their shape.


Step 3: Bake or Fry

Oven method:

  • Preheat oven to 180°C

  • Place skewers on a tray and bake for 15–20 minutes, until cooked and lightly crispy

Pan method:

  • Heat olive oil in a pan

  • Fry the rolls on medium heat until golden and cooked through


Step 4: Prepare the Yogurt Tahini Base

In a serving dish, add yogurt.
Mix in tahini, lemon juice, minced garlic, salt, pepper, and crushed coriander.
