Chicken Chow Mein

Ingredients

Chicken Marinade

  • Chicken breast, thinly sliced
  • Salt, to taste
  • Black pepper, to taste
  • Soy sauce, as needed
  • Cornflour, as needed

Noodles

  • Chow mein noodles
  • Water for boiling
  • Salt, to taste
  • A little oil
  • Reserved noodle water, as needed

Stir Fry

  • 2 tablespoons oil
  • Minced garlic
  • Chopped green chilies
  • Sliced carrots
  • Sliced capsicum
  • Sliced onions
  • Sliced cabbage
  • Sliced green onions

Sauce

  • Light soy sauce
  • Dark soy sauce
  • Oyster sauce
  • Sesame oil or sesame sauce
  • Chili sauce

Instructions

  • Thinly slice chicken breast and marinate with salt, black pepper, soy sauce, and cornflour.
  • Boil chow mein noodles in water with salt and a little oil. Reserve some noodle water, then drain.
  • In a bowl, mix light soy sauce, dark soy sauce, oyster sauce, sesame oil or sesame sauce, and chili sauce. Set aside.
  • Heat 2 tablespoons oil in a wok or pan. Add minced garlic and chopped green chilies. Sauté for a few seconds.
  • Add marinated chicken and cook until fully done.
  • Add carrots, capsicum, onions, and cabbage. Stir-fry on high heat for 2 minutes.
  • Add boiled noodles and a little reserved noodle water.
  • Gradually add the prepared sauce and toss everything well on high flame.
  • Add more noodle water if needed to loosen the noodles.
  • Finish with sliced green onions and serve hot.

Notes

Do not overcook the noodles or vegetables. Keep the flame high while tossing for the best chow mein texture.
