Ingredients
For the Pasta
- * 250g large tube pasta
- * Water for boiling
- * Salt for boiling water
- 1 tablespoon * oil
For the Minced Meat Filling
- * 500g minced meat (beef or chicken)
- * 2 tablespoons oil
- * 1 medium onion (finely chopped)
- * 1 tablespoon ginger garlic paste
- * 2 medium tomatoes (chopped or blended)
- * 1 tablespoon tomato paste (optional)
- * 1 teaspoon red chili powder
- * 1 teaspoon paprika or Kashmiri chili powder
- * ½ teaspoon turmeric powder
- * 1 teaspoon coriander powder
- * ½ teaspoon cumin powder
- * ½ teaspoon black pepper
- * ½ teaspoon oregano or Italian seasoning
- * Salt to taste
- * 2 to 3 tablespoons ketchup or pasta sauce
- * Fresh coriander or parsley (optional)
For the White Sauce
- * 2 tablespoons butter
- * 2 tablespoons plain flour
- * 2 cups milk
- * ½ cup cream
- * ½ teaspoon black pepper
- * ½ teaspoon chili flakes
- * ½ teaspoon oregano
- * Salt to taste
- * ¼ cup cheese (optional)
- * ½ teaspoon chicken powder (optional)
For the Cheese Topping
- * 1 to 1½ cups mixed shredded cheese
- * Mozzarella cheese
- * Cheddar cheese
- * Oregano for sprinkling
- * Chili flakes (optional)
Instructions
Step 1: Boil the Pasta
- Bring a large pot of water to a boil. Add salt and a little oil.
- Add the large tube pasta and boil until it is just cooked but still firm. Do not make it too soft because the pasta will be stuffed and baked later.
- Drain the pasta and let it cool slightly. Handle it gently so the pasta pieces do not break.
Step 2: Prepare the Minced Meat Filling
- Heat oil in a pan. Add chopped onion and cook until soft and light golden.
- Add ginger garlic paste and cook for about one minute until fragrant.
- Now add the minced meat and cook until it changes color. Break the meat with a spoon while cooking so there are no big chunks.
- Add chopped or blended tomatoes, tomato paste, red chili powder, paprika, turmeric, coriander powder, cumin powder, black pepper, oregano, and salt.
- Cook everything together until the meat is fully cooked and the mixture becomes thick. The filling should not be watery because it needs to stay inside the pasta.
- Add ketchup or pasta sauce for a richer lasagna-style flavor. Mix well and cook for a few more minutes.
- Turn off the heat and let the filling cool slightly before stuffing the pasta.
Step 3: Make the White Sauce
- In a saucepan, melt butter on low heat.
- Add plain flour and stir continuously for 1 to 2 minutes. Do not let the flour turn brown.
- Slowly add milk while whisking so the sauce stays smooth and lump-free.
- Add cream, salt, black pepper, chili flakes, oregano, and chicken powder if using.
- Cook on low heat until the sauce becomes creamy and slightly thick.
- You can also add a little cheese to the sauce for extra creaminess. Mix until smooth.
- The white sauce should be creamy but still pourable. If it becomes too thick, add a little more milk.
Step 4: Stuff the Pasta
- Take each piece of boiled pasta and fill it with the prepared minced meat filling.
- You can use a small spoon or a piping bag to make this easier.
- Fill the pasta gently and do not press too hard, otherwise the pasta may break.
- Arrange the stuffed pasta pieces in a baking dish. You can place them standing upright or lying flat, depending on your pasta shape and baking dish.
Step 5: Layer with White Sauce
- Spread some white sauce at the bottom of the baking dish.
- Place the stuffed pasta on top of the sauce.
- Pour more white sauce over the stuffed pasta and spread it gently so the pasta is covered.
- This white sauce layer keeps the pasta creamy and prevents it from drying out in the oven.
Step 6: Add Cheese on Top
- Sprinkle mixed shredded cheese generously over the top.
- Use mozzarella for a soft melted texture and cheddar for a stronger cheesy flavor.
- Sprinkle oregano and chili flakes on top if you like extra flavor.
Step 7: Bake Until Golden and Bubbly
- Preheat the oven to 180°C.
- Bake the stuffed pasta for 20 to 25 minutes, or until the cheese melts and the top becomes lightly golden.
- If you want a more golden top, broil it for 2 to 3 minutes at the end. Keep an eye on it so the cheese does not burn.
- Once baked, let it rest for 5 minutes before serving.
